2 medium Sweet
Potatoes (peeled optional)
1 c grated parmesan
cheese
olive
oil
salt

Preheat oven
to 450˚F
Cut sweet potatoes into 1/4-inch sticks.

In a bowl, toss in
a drizzle of olive oil.
Then pour in 2/3 of parmesan and a seasoning of salt. Toss
well to coat each stick.

Place the fries on a baking sheet lined with parchment paper.
Bake for 30 min. Toss fries every 10 minutes to give an even browning.
